I normally will shelf a game if a remake hits, The exception to that is Final Fantasy 7 I own the original on my Switch and my wife got me Remake for my PS4 on my birthday. So until I got it I continued with my Switch copy.
Good question. I’m a very cheap gamer, so I stick with the original if I have it. I don’t really replay RPGs, so if I have it and played it, I won’t get the remake anyway; if I have it, haven’t played it and it’s on something I still regularly play, I’ll mostly just play the original. But portability in terms of 3DS/Vita/Switch usually take preference over any of that. For example I owned Persona 5 and Personal 5 Royal for PS4, but never played until the Switch port came out.
