Pokemon Gold / Silver / Crystal gets all the love because Satoru Iwata managed to crowbar enough into the game that they could include 2/3 of Kanto, but I would argue that it’s an example of “just because you could doesn’t mean you should”. Because of that, Johto is underbaked, the level curve is all over the place, and the only way they can make the boss fights challenging is giving one or two gym leaders overtuned Pokemon and the “champion” a team that has two Pokemon out of 6 that are actually legal. And with only 104 possible Pokemon that could be added because of Game Boy game structure, they used a slot on giving Chansey an evolution it didn’t need.

I’ve got 2 that I hate beat ages ago.
    1. FFXII – I hated running and running and running all over. The overworld felt blah, samey. And the combat was just let it play itself. I was too smart, I didn’t even need to play most of the time. Controller down & gone. Couldn’t stand it.
    2. Undertale – I never understood any hype. I played, I beat, I hated every minute, but told a kid at school I’d give it a go. Can’t convince me this is anything but odd abandonware.

Wouldn’t go so far as to say I hated Undertale, but I do think it’s an extremely ugly game and the combat is horrible. The story/twist is fairly clever but have no interest in ever playing it again. The music is good, though.

Bayonetta is maybe another one. I can admit it’s a well made character action game, but I can’t stand the writing and characters. And I loathe the sub-Liz Hurley in Bedazzled performance of Bayonetta herself – it’s so horribly mannered!
